Description
These Ham & Eggs in a Muffin Tin are a wonderfully savory and filling low carb breakfast option! They are perfect for busy mornings and can easily be made ahead of time for a grab-and-go meal you’ll love!
Ingredients
- 1.5 tablespoons (about 20 grams) unsalted butter, for greasing the pan
- 12 slices (about 220 grams) deli ham
- 12 large eggs (about 600 grams)
- ¾ cup (about 90 grams) shredded cheese (cheddar, Monterey Jack, or your favorite blend)
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Coat the inside of a standard 12-cup muffin tin generously with butter.
- Place one slice of ham into each opening of the prepared muffin tin, pressing it down to form a cup shape.
- Carefully crack and add one egg into the center of each ham cup.
- Bake in the heated oven for approximately 7 minutes. Take the muffin tin out of the oven, then sprinkle the shredded cheese over the top of each egg and ham cup. Return the tin to the oven for another 7 minutes.
- Season the baked ham and egg cups with salt and pepper according to your preference, then serve them warm.
