Description

These Cheddar Dill Muffins are wonderfully savory muffins perfect any time you need a quick bite or simple side. They offer a dense yet moist texture combined with just the right touch of fresh dill flavor. They are truly irresistible!

Ingredients

  • 2 cups (240 grams) all-purpose flour
  • 1 tablespoon (15 grams) baking powder
  • ¾ teaspoon (4 grams) salt
  • 2 tablespoons (30 grams) granulated sugar
  • ¼ cup (6 grams) fresh dill finely chopped
  • 1 large egg
  • 1 cup (250 grams) plain yogurt
  • ½ cup (120 ml) milk
  • 2 tablespoons (30 grams) unsalted butter melted
  • ¾ cup (80 grams) shredded cheddar cheese

Instructions

  1. Heat your oven to 400°F (200°C). Prepare a muffin pan by greasing it with butter or using cooking spray.
  2. In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, mix the egg, yogurt, milk, and melted butter. Stir in the chopped dill.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Gently fold in the shredded cheddar cheese.
  5. Fill each cup in the prepared muffin pan about two-thirds full with the batter. Bake for about 20 minutes. You will know they are done when a toothpick inserted into the center comes out clean.
  6. Let the muffins cool slightly in the pan before carefully removing them.

Notes

  • Allowing the muffins to cool slightly in the pan helps them firm up before you move them.
