Description

These Pizza Muffins are a fun, savory twist on classic pizza flavors baked into a portable muffin form! They are perfect for snacks, lunches, or easy weeknight dinners, bursting with cheesy goodness and your favorite pizza toppings. They smell absolutely amazing while baking and are sure to be a hit with everyone!


Ingredients

For the Muffins

  • 1 ½ cups (180 grams) all-purpose flour
  • 2 teaspoons (10 grams) baking powder
  • ½ teaspoon (1 gram) Italian seasoning
  • ¼ teaspoon (1 gram) salt
  • ½ cup (120 ml) vegetable oil or corn oil
  • ½ cup (120 ml) milk
  • 2 large eggs
  • ½ cup (50 grams) shredded mozzarella cheese
  • ½ cup (75 grams) red bell pepper, diced
  • ⅓ cup (50 grams) pepperoni, diced

For the Toppings

  • ⅓ cup (35 grams) shredded mozzarella cheese
  • Pepperoni pieces, cut into smaller sizes
  • 6 cherry tomatoes, halved

Instructions

Making the Muffins

  1. In a large mixing bowl, whisk together the flour, baking powder, Italian seasoning, and salt.
  2. Create a well in the middle of the dry ingredients.
  3. In a separate bowl, whisk together the oil, milk, and eggs.
  4. Pour the wet mixture into the well in the dry ingredients.
  5. Stir everything gently until just combined and the dry spots disappear. Do not overmix.
  6. Stir in the shredded mozzarella cheese, diced red pepper, and diced pepperoni.
  7. Spoon the batter evenly into 12 muffin cups lined with paper liners.

Adding Toppings and Baking

  1. Sprinkle the remaining shredded mozzarella cheese over the top of each muffin.
  2. Add a few smaller pieces of pepperoni and one cherry tomato half on top of the cheese layer on each muffin. Place the tomato half with the cut side facing up.
  3. Bake the muffins in a preheated 375°F (190°C) oven for about 25 minutes.
  4. They are done when the tops look firm to the touch and are lightly golden brown.
  5. Let the muffins cool slightly in the pan before moving them to a wire rack.

Notes

Storage: Store cooled pizza muffins in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days. Reheat gently in the microwave or oven.
