Description

These  Applesauce Oatmeal Muffins are wonderfully moist and feature a delightful hearty texture from the oats combined with the sweet flavor of applesauce and warm cinnamon! You won’t be able to resist these comforting treats!


Ingredients

  • 1 ¾ cups (220 grams) all purpose flour
  • 1 cup (90 grams) old fashioned or quick oats
  • ½ cup (100 grams) granulated sugar
  • 1 ½ teaspoons (6 grams) baking powder
  • 1 teaspoon (2 grams) ground cinnamon
  • ½ teaspoon (3 grams) baking soda
  • ¼ teaspoon (2 grams) fine sea salt
  • 1 large egg, beaten
  • ½ cup (120 ml) milk
  • ¼ cup (60 ml) neutral flavored oil (like canola or vegetable)
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 cup (250 grams) unsweetened applesauce
  • 1 tablespoon (8 grams) old fashioned oats, for sprinkling on top (optional)

Instructions

  1. Heat your oven to 375 degrees Fahrenheit.
  2. Get your muffin tin ready by lightly coating the cups with cooking spray or placing paper liners inside each one.
  3. In a large bowl, mix together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt until they are well combined.
  4. In a separate medium bowl, whisk together the milk, egg, oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Add the applesauce at the same time. Stir the mixture gently just until the flour disappears and everything is combined. Don’t overmix.
  6. Spoon the batter evenly into the prepared muffin cups. Fill them about two-thirds full.
  7. If you like, sprinkle the tops of the muffins with the extra tablespoon of oats.
  8. Place the muffin tin in the preheated 375 degree F oven. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the muffin tin for about 3 to 5 minutes before carefully transferring them to a wire rack to finish cooling completely.
  10. You can enjoy these muffins warm straight from the oven or after they have fully cooled.

Notes

Storage: Cool muffins completely. Store airtight at room temperature for up to 3 days or in the refrigerator for up to a week.

Serving: Enjoy warm or at room temperature. Reheat briefly in a microwave if desired.
